10-Minute Shrimp Ceviche
Traditionally, ceviche is made using raw shrimp. The shrimp is cooked using the acid from the limes. I decided to make a quick version, using pre cooked shrimp which results in a delicious ceviche that is prepared from start to finish in 10 minutes.

This dish is both delicious and absolutely gorgeous! Feel free to interchange any of the vegetables. Avocado, orange pepper, carrots, cucumber - all would be delicious and would add a unique texture to the dish.
I usually use a 16 - 20 count bag of cooked shrimp. They are the perfect size for this dish and I love the texture. Cooked octopus or calamari would also be delicious in this recipe! This recipe truly is so versatile. Use whatever vegetables, cooked seafood and citrus you have on hand and you will be left with a fresh, crunchy and beautiful appetizer.

INGREDIENTS:

1/2 red bell pepper
1/2 yellow bell pepper
1 green onion
1 cup shredded red cabbage
1 pound of shrimp, cooked
juice of 1-2 limes
salt and pepper to taste
1/2 cup cilantro, roughly chopped

INSTRUCTIONS:
Combine your finely diced bell peppers, green onion, red cabbage and roughly chopped cilantro in a small mixing bowl.
Dice your cooked shrimp into small, bite sized pieces and add to the bowl
Lastly, season with salt and pepper to taste and juice 1-2 limes into the bowl and stir to combine all the ingredients.
Serve with your favourite tortilla chips and enjoy!
